Winter Steak Marinade
1/2 Cup red wine (Good stuff; at least as good as what you enjoy drinking)
1/4 Cup Worcestershire sauce
1/4 Cup honey (preferably from your local beekeeper)
3 TBSP whole grain mustard
1 TBSP fresh ground caraway seeds
1/2 tsp ground cayenne pepper (optional)
4 large cloves of garlic (rough chopped)
1 sprig of fresh rosemary (leaves removed and rough chopped) Coarse ground black pepper to taste
Mix all the ingredients together in a pan large enough to hold your steaks and marinade and pour over any steak you may wish to enjoy. London Broil to New York Strip to Flank Steak. Let the marinade soak into the meat for 24-48 hours. Flip the steaks over once a day.
Remove steaks from marinade and pat dry with a paper towel. They can be grilled or pan seared to your preferred doneness. Make sure to add oil, butter or bacon fat to the pan if you plan on pan searing it.
Roasted winter vegetables such as Delicata squash and parsnips are wonderful with this marinated steak.
